We're huge fans of fried rice in our house and there are millions of recipes out there on the big wide web and I'm sure I've tried at least half of them. This recipe is one I have chopped & changed over time to fit in with my families tastes, especially the kids and more importantly one that fits in with my busy schedule. I don't have time to leave the rice in the fridge overnight and I certainly don't have an asian supermaket aisle in my pantry so the recipe I use below is quick, easy and suits all of our taste buds. You'll see there's peanut oil in this recipe (used for the flavour it gets when heated, if you or someone in your family has a nut allergy just substitute for olive oil) With the vegies, I use frozen veggies and packet spinach but you can use up whatever you have in your freezer or crisper. Miss 7 enjoys this cold so I am lucky, I know a lot of kids won't eat it cold so sending it to school heated in a thermos food container is perfect and should keep the little darlings happy.
