We always have yoghurt in our house that is close to expiring so wanted a healthy recipe to use it up to save throwing it out.
This quick and easy pancake recipe has no added sugar and is great to eat straight away or freeze for lunches down the track.
1/2 cup greek yoghurt (we used Chobani Blueberry because it was nearly out of date)
1/2 cup milk
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 cup pineapple diced small or 1 packet of Dole Pineapple Pieces
1. Add egg, yoghurt and milk into a large bowl. mix to an even consistency
2. To same bowl add flour, baking powder, salt & vanilla
3. Add in pineapple and mix till distributed evenly throughout batter.
4. Heat non-stick Frypan to medium heat, pour in mixture to the required pancake size (we did piklet size)
